Frozen Large Hairtail Middle-Cut Sections
Thick middle-cut sections of hairtail, sawn clean across the body. The skin is a fine, almost foil-like silver; the cut face shows pale pink-white flesh with a small dark centre where the spine ran.
Heads and tails are taken off and only the plump middle is kept, so every piece is deep-bodied and meaty with few bones. Braise it in the classic way with soy and ginger, pan-fry the sections until the skin blisters, or deep-fry and finish with a hot, sweet-sour sauce.
